Tendli Ki Sabzi (Ivy Gourd Tomato Stir Fry)

Tendli Ki Sabzi

Ivy gourd (Coccinia indica) is a unique tropical plant that is a member of the family of pumpkin family and is an aggressive climber that can spread quickly over trees, shrubs, fences and other supports.

India have massive plantations of this vegetable, apart from Thailand, Malaysia and Indonesia. In certain parts of the U.S., the ivy gourd is known as Rashmato (singular) or Rashmati (plural). Some people have begun using the plural term Rashmatoes, since it is sounds more like potatoes or tomatoes.

Ivy Gourd leaves, roots and fruits are used in medicines .Ivy gourd has been classified as a herb in Thai and Ayurveda medicine. The parts used in diabetes treatment are the leaves, but the primary use of ivy gourd is culinary, and it is considered a vegetable.

Ivy Gourd is used in Ayurveda treatments to control fever and skin allergies.

Ivy gourd contains beta-carotene, a major Vitamin A source essential for good eyesight; and Vitamin C which helps prevent common cold and flu. It is also considered a good source of protein and fiber.

 
Ingredients:





⚫350gms - Ivy Gourd 
(Wash and dry, then cut into halves)

⚫2 medium size - Tomatoes
 (finely chopped)

⚫7-8 no. - Garlic Cloves 
(finely chopped)

⚫one small piece - ginger -
 (finely chopped)

⚫5-6 no. - curry Leaves

⚫cooking oil

Dry Ingredients
⚫Coriander Powder - 3tsp
⚫Turmeric Powder -  1tsp
⚫Red chilly Powder - 2tsp
⚫Salt to taste

Method

◾Heat oil (30 ml) in pan for shallow frying of ivy gourd. See to it that it gets cooked properly, this process takes approximately 7-8 minutes (on medium to high flame)


◾When done, remove in plate, and also remove oil from pan.



◾Now take the same fry pan, add one tsp oil, in that add chopped ginger, garlic and curry leaves



◾In this add the finely chopped tomatoes, first cook tomatoes on high flame for one minute, then cover the lid and cook on slow flame for 3-5 minute, till tomato is tender(cooked properly)




◾Now remove the lid, add the dry ingredients, that is coriander, turmeric, red chilly powder and salt to taste, Mix well.





◾Now in this add shallow fried ivy gourd, and very little water.




◾If you prefer properly cooked ivy gourd then add half-one small cup of water, else add little water as the purpose, all dry ingredients get mixed well and don't give burnt feel and at the same time ivy gourd feel crisp in taste.  But if  you have elderly people at home, who want well cooked vegetable then need to add one small cup water to cook ivy gourd properly. After adding water, you need to cover the lid, and cook on slow flame for 3-5 minutes..


◾Your Ivy Gourd is ready to serve with roti(Indian bread).
