Instant Pumpkin Recipe (lal bhopla Bhaji)


Pumpkin is member of the Cucurbitaceae family, which also includes melons, gourds, cucumbers.

Pumpkins are enriched with vitamins A, C and E, and zinc which combines to give you a healthy and glowing skin. Having a cup of pumpkin seeds daily keeps the skin nourished and hydrated, protecting against the appearance of wrinkles.
Biologists suggest pumpkins to be highly useful for treating hormonal disorders or adolescent behavior, menopause disorder, intestinal parasites and sexual hyper-excitability.


My red pumpkin recipe is very quick, simple and very tasty recipe of Indian Pumpkin (which is called as kuddu in Hindi and bhopla in Marathi) cooked with minimum number of ingredients and flavored with cumin seeds, lemon juice, sweet and hint of sugar.



Required

     ◾Pumpkin 250 gms

Dry Ingredients

▪Turmeric powder 1/2 tsp
▪Red chilly powder 1 tsp
▪Coriander powder 1 tsp
▪Cumin seeds pwdr 1/2 tsp
▪Salt to taste
▪Sugar 1 tsp


✔Lemon juice 1tsp
✔Oil 1 tbsp
✔Cumin seeds 2tsp


Action:




1. Peel and chop Pumpkin
Peel the pumpkin, scoop out the fibres and seeds in the centre and cut into one inch pieces. 




2.Cooking Time

✒Heat oil. Add cumin seeds, when cumin seeds begin to crackle, add pumpkin pieces and stir fry on high flame till it looks glossy, then add salt and half cup of water cover the lid, cook on slow flame for 3-5 minutes till it gets properly cooked.








✒Add all ingredients that is cumin seeds powder, coriander powder, red chilly powder, turmeric powder and sugar. Most important don't add salt again as already added before. Mash it with help of cooking spoon, mix all well and cook on slow flame for one minute. Lastly add lemon juice, serve hot with chapatti.







PS: Try this recipe in your monthly cycle period as very effective in stomach cramps and menstrual pain.
