Gram Flour Cutlets In Onions & Tomatoes Gravy



How to prepare Sindhi Besan ki tikki ki sabzi | Sindhi Besani Bhaji | Besan Joon Aaniyoon | Gram Flour Cutlets In Onions & Tomatoes Gravy


Hi,

I am back with one more interesting recipe for you. 


This is vegetarian dish prepared in onion and tomato gravy which is very commonly used in our day to day cooking, but the unusual thing is besan ki tikki (Gram flour cutlets) which is cooked in this gravy and good quantity of onions and tomatoes are added in this recipe.

This recipe require good practice, especially making cutlet from gram flour. You can't able to knead dough from gram flour if you skip oil in this. Water and oil is added in balanced way to make nicely shaped and fried cutlets.


Required
For making Gram Flour Cutlet (Besan Ki Tikki)

✔Refined oil for frying
150-200ml or Enough oil for deep frying.

✔Gram Flour (Besan)
150-200 gms

✔Poppy Seeds  (Khaskhas)
1 tbsp

✔Dry-Pomegranate Seeds (Anar dana)
2tsp

✔Small Onion,
very finely chopped (optional)
1 no.

✔Coriander leaves
1tbsp

✔Carom Seeds (Ajwain, owa) 2tsp

✔Cooking oil for kneading dough
20-25 ml (3-4 tbsp)

✔Dry Fenugreek (Kasturi Methi) (optional)
2tsp

✔Sesame Seeds (optional)
2tsp

✔Red chilly powder
2tsp

✔Turmeric powder
½tsp

✔Cooking soda (Soda bicarbonate)
1tsp

Salt to taste

Water for kneading dough
½ cup

The optional things mentioned above are my addition to this recipe, you can skip any of above optional one, if not available to you..

Recipe of Cutlet

✒Step 1: Kneading

Take large clean bowl or plate, take glass one as kneading gram flour dough in glass is more comfortable then going with steel utensil, as dough don't stick in glass utensil, the way it become sticky in steel utensils.

(Its my observation, if steel utensil is more comfortable to you, you can go with that)

First take gram flour, and then add all ingredients except oil and water, first mix all, then slowly and gradually add oil and water to knead the dough, in that first goes oil, and then water. The dough is quite stiff and you can able to give round or oval shape to cutlet, you will find while kneading your hands will be oily. Make small cutlets from that dough, so they get properly cooked inside while frying.




Step 2: Frying

Heat oil in a Fry pan, first add only one cutlet, see to it, its not breaking and coming out nicely, then add rest other cutlets, and fry tikkies till golden brown on medium flame, if you fry on high flame, inside don't get cooked properly. When it is done keep all tikkies a side and prepare the gravy.


For making gravy we require

✔Onions 
roughly chopped
8-10 number medium or big size

✔Tomatoes 
finely chopped
4-5 medium

✔Turmeric
1tsp

✔Coriander powder
3tsp

✔Green chilies
3-4 no.

✔Ginger
One small piece 
finely chopped

✔ Red Chili powder
1 tsp.

✔Garam Masala Powder
1tsp

✔Oil
3tbsp

✔Water
1 1/2 to 2 cups

✔Salt to taste




Method

Step 1: Vegetables Cutting

Rougly chop onions
Finely chop tomatoes and ginger.

Step 2: Cook onions on high flame till light brownish in color

Heat oil in a cooking pan and add onion. Cook till the onion is light brownish in color.




Step 3: Add tomatoes and ginger

Add chopped tomatoes and ginger, first 1-2 minutes cook on high flame, then slow the flame, cover the lid, cook till tomato gets cooked properly.




Step 4: Add dry ingredients and little water

Now open the lid, mix well and then add turmeric, coriander powder, red chili powder, mix well, add 1½cup of water in it, as that helps the dry ingredients to mix and don't get burnt, plus in next process cutlets will be get cooked in this gravy.





Step 4: Add Cutlets

Add the cutlets in the gravy and cover the pan. Let the cutlets will get cooked on low heat for 10-15 min. Check the cutlet by inserting knife or cooking spoon whether cooked or not, if looks soft, and easy to break, means its done.




5) Lastly, add the garam masala and turn off the heat. Stir in the masala gently being careful not to break the tikkis.

Serve hot with chapatti.
