Lehsuni Baingan Masala



How to prepare Lehsuni Baingan Masala. (Spicy Fried Eggplant sautéed in Garlic Tomato)



Baingan is also known as aubergine, egg plant and brinjals. Lehsuni Baingan Masala Fry is a recipe of fried baingans and delicious mix of garlic, tomatoes and Indian spices to give a unique and spicy taste. 





Brinjal are rich in fibre and low soluble carbohydrates. Thus beneficial for regulation of blood sugar levels and also controls absorption of glucose. This makes them the best option for people suffering from type 2 diabetes. 






Required



✔500 gms - Brinjal (sliced) 

✔15-20 garlic cloves (finely chopped)
✔3-4 Tomatoes (finely chopped
✔150ml Oil for frying 


Dry ingredients

✔4tsp Red chilly powder
✔2tsp Coriander powder 
✔1tsp Turmeric powder 
✔1tsp Amchur powder (optional)
✔Salt to taste



Method:

Step 1: Vegetable cutting

◾Peel, finely chop garlic and keep aside.


◾Chop tomatoes finely.


◾Wash and remove the stems. Slice them vertically and cutting work needs to be done after placing oil for frying, to avoid discoloration of baingan.


Step 2: Fry baingan

◾Heat oil in a deep frying pan. Fry baingan on high flame for 6-7 minutes till turn crisp and golden brown.







◾Drain excess oil keep aside.






Step 3: Make Gravy



◾Now take the same frying pan, add tsp cooking oil,   add chopped garlic, saute for 2 minutes. 





◾Add tomatoes, saute on high flame for 2 minutes, then simmer and cook tomatoes till soft and tender.




◾Add all dry ingredients, mix well.


◾Finally toss fried baingan in above mixture.



◾If needed add 1tsp of oil and cook them on a slow flame covering the lid for 25-30 seconds. Serve hot with roti.
