Baingan Fry Masala Recipe

Today, I'm partaking in another delicious preparation of Brinjal. This recipe is very simple and easy to cook, and comes under fast to cook, good to eat recipes. Baingan fry masala is a recipe of fried baingans and delicious mix of Indian spices to give a unique and spicy taste.




Brinjal is also known as baingan, eggplant and Aubergine. Brinjals are rich source of fibre and low soluble carbohydrates. Thus, beneficial for regulation of blood sugar levels and also controls the absorption of glucose. This makes them the best option for people suffering from type 2 diabetes.

Ingredients required for making Baingan Fry Masala:



✒ 300 grams Baingan (Brinjals)
✒ 150 ml cooking oil for frying



✏Dry ingredients

✒ 3-4 tsp coriander powder
✒½ tbsp besan (gram flour)
✒ 3 tsp Red chilly powder
✒ 1 tsp Turmeric
✒2 tsp dry mango powder
✒1 tsp sesame seeds
 salt to taste


Step by step process of making Baingan fry masala



Step 1: Mise en place



◾Wash the brinjals and wipe it dry. Remove the stems and cut them into round slices.



Step 2: Prepare Masala for baingan



◾Mix all the ingredients in a bowl. Keep it aside till needed. (Ingredients used: coriander powder, red chilly powder, turmeric, dry mango powder, besan, sesame seeds and salt to taste)




Step 3: Cooking time (will take 5-7 minutes)



◾Heat oil in a deep frying pan, fry baingan on both sides on high flame for 5-6 minutes and 1-2 minutes on slow flame till turn crisp and golden brown.. Drain excess oil Keep it aside till needed.









◾Now take the same frying pan, first add the fried brinjals, add all dry ingredients, if needed, add 1tsp of oil and cook them on a slow flame covering lid for one minute. Turn off heat. Serve hot with rice or roti.
