Mixed Dal Pakora (Lentil Fritters)

Today I'm sharing yet another healthy, delicious and tasty recipe of pakora.. Mix Dal Pakoras are usually served at tea time snacks or starters. This is my one of the most favorite food, and there are so many sweet memories attached with dal pakora. In our school days, mom uses to prepare this in chat style with curd and sweet tamarind and green chutney.

Ingredients required for making mix dal pakora


  • ✒6tbsp Bengal gram Dal (Chana Dal)
  • ✒2tbsp yellow moong Dal 
  • ✒2tbsp Urad Dal (Black gram) - white lentil
  • ✒2tbsp Toor Dal (Pigeon Peas)
  • ✒2tbsp Split green moong dal (green gram)


Other ingredients


  • ✒2 Green chilies
  • ✒1tbsp coriander leaves
  • ✒7-8 curry leaves
  • ✒1 small piece ginger
  • ✒1 tsp black peppercorn
  • ✒1tsp cumin seeds
  • ✒1 tsp coriander seeds
  • ✒1tsp Fennel seeds (Saunf)
  • ✒1tsp red chilly powder
  • ✒Salt to taste
  • ✒ 1tsp sugar (secret ingredient)
  • ✒ ⅓tsp soda bicarbonate
  • ✒ 200 ml cooking oil for frying




Step by step process of making Mix Dal Pakora (Mixed Lentil Fritters)


✏Step 1: Soaking of Lentils


◾ Mix all the lentils, rinse and soak all the lentils together for approximately 4-5 hours in 600-700 ml of water.





✏Step 2: Coarse Grinding of lentils





◾Rinse the lentils again, drain off the water and coarsely grind them add salt and red chilly powder at the time of grinding..




 







Important point: Don't add water. Don't make fine paste, use push option in your mixer grinder. Earlier Whenever i had used mixer grinder for making batter for dal pakora, it was a flop show as I always end up batter as fine paste in my mixer grinder..(as having motor speed of 750 watt) Thats the reason I had selected my glen chopper for grinding, added in batches for better results. Pakora turnout excellent as it was very crispy from outside and soft inside.




✏Step 3 : Coarse grinding of other ingredients




◾ Wash coriander leaves, curry leaves and green chillies and roughly chop them.

◾Wash and peel ginger.

◾Take blender or chopper, add black peppercorns, cumin seeds, chopped ginger, coriander, curry leaves and green chillies.

◾Make a coarse paste.





✏Step 4: Mixing (add secret ingredient)




◾Mix dal batter and coarse paste prepared in step no. 3. Add ⅓tsp soda bicarbonate and 1tsp sugar. Mix very well. Our batter is ready for frying



✏Step 5: Deep Frying


◾Heat oil on medium flame and deep fry all pakoras till they turn golden brown and crispy.
