Urad Dal Dry Fruit Halwa

Winter is the best time to enjoy dry fruits, jaggery, seasame seeds, ghee, butter, very colorful fruits and vegetables like oranges, strawberries, and carrots. The best thing about winter is that these foods are easily digested due to the excessive body heat.

Today I am partaking in winter special sweet dish recipe. This is consumed as the first meal of the day with green cardamom and saffron flavored hot milk.


This sweet recipe is prepared in different ways by selecting any one of following ingredient as the base ingredient. The base ingredients which are used for making this recipe are wheat flour, milk and urad dal. When this sweet is prepared with wheat flour is called as Khorak or Sacchi Bhaji. The same Recipe prepared with milk is called as Maajun or Majoon and when this recipe is prepared with urad dal as base ingredient is said as Maahin Ji Mithai (Urad Dal Ki Mithai).


I'm going to add urad dal as the base ingredient. Urad dal not only give good volume and scrumptious taste, but have excellent properties of boosting the immune system.


My white lentil sweet recipe is a simplified version and different from the original recipe. In the original recipe, soaked and wet urad dal is used and it is grinded using very little water or no water at all. But grinding the urad dal without water in mixer grinder is really challenging job. Even if you handle this step successfully, but roasting dal is also not so easy going, as keep sticking to the bottom so will spoil the hard work involved in preparing this sweet dish.



Hence, I have invented another easy version of this sweet, as first I have rinsed this white lentil which is very important to clean impurities, after that soaked this dal for 5-6 hours, then left this lentil whole day to dry thoroughly and then managed the dry roasting and grinding.





✏ Let's start with recipe details


  • Preparation Time : 25-30 minutes
  • Cooking Time : 35-40 Minutes
  • Dal soaking time 6 hours
  • Dal dry time: 24 hours

✏ Ingredients required

  • 500 g Urad dal (white lentil)
  • 1ltr milk reduced to 300 grams or
  • 250 g Mava (Khoya)+120ml milk
  • 250g Dry Dates
  • 100g Dry Coconut 
  • 150g Walnuts
  • 150g Almonds
  • 150 g Cashew nuts
  • 150 g Poppy Seeds
  • 450 - sugar (Syrup - 2 thread) 
  • 300g ghee



✏ For garnish

  • Chandi ki varak (edible silver leaf)
  • Pistachio
  • Dried rose petals.

✏ Method: 

Step 1 Miss end place


Soaking of Urad dal (Split white lentil): Rinse the urad dal for 3-4 times. Soak it for 5-6 hours


◾Drain the water, place it in a cloth, keep aside and dry it. After soaking, I have kept this urad dal whole day to dry thoroughly.


◾ Roast and grind urad dal: Dry roast urad dal in a frying pan, allow it cool down for 5-10 minutes and then grind it. You will obtain the texture like semolina Keep it aside until required.





Chop or crush the following nuts that is almonds, walnuts and cashew nuts. Roughly chop nuts with a knife or use mini chopper or food processor. Put aside until needed.








◾Grind dry dates: Stone the dates, chop finely and then grind to fine paste. Put aside until needed.



◾grate the dry coconut.


Roast and grind green cardamom: Dry roast green cardamom on slow flame and then grind it to a fine paste.

✏ Step 2: Cooking time 


◾ Heat ghee in a heavy bottomed pan, add urad dal and roast on slow to medium flame for 7-8 minutes. 



◾Now, put crushed cardamom pods into it.


◾In the meantime, make sugar syrup of two string's. For that boil 40-50ml water, add sugar and boil water on medium heat, when you see small bubbles resembling snowflakes in sugar syrup. This indicates syrup spins a 2-inch thread when dropped from a spoon.




◾Now back to our main preparation, add Khoya (unsweetened thickened milk), Mix well and saute for 8-10 minutes on slow flame.






◾ add poppy seeds and combine well





◾Now add all crushed and powdered dry ingredients that is dry dates, dry coconut, almonds, walnuts and cashew nuts, stir well, saute for 2-3 minutes on slow flame. Do not leave the pan unattended.



◾ Add sugar syrup (2 thread consistency) as that helps to give the binding to this sweets. Stir and mix well. Turn the fire off 


◾Grease the tin or thali, pour the mixture into the thali, spread evenly, When cool down, 



◾top it with rose petals, pistachio and edible silver leaf. Cut into small slices and serve.







Notes: - 

✏ If you have referred my complete recipe, then you must have checked that I have played with the original recipe. As removed moisture from this recipe by using thoroughly dried urad dal. But again moisture is equally important for proper binding of this sweet, which can be achieved by using sugar syrup, but if the sugar syrup quantity is increased, it will give undesirable sweetness, which is not allowed as focus is to keep this recipe very healthy. 

So what binding option can be used in this recipe

1. Use Edible gum (Also called as Goondh | Gaund |Gondh| Dink | Ding)

How to use edible gum - needed 2tbsp - You have to deep fry in hot ghee, one tablespoon at a time till the pieces puff up. Drain on absorbent paper and keep aside, cool down and then grind it in mixer grinder or crush it.

2. Use cornflour (cornstarch)

How to use cornflour: Take 30 ml room temperature water, add 1tbsp cornflour, mix it well in this sweet and saute for 3-4 min on slow flame as when cornflour is heated it cause a thickening and binding action.

      As i had prepared many rounds of this sweets in winter season so new update is that addition of home made thickened milk (1000 ml reduced to 400 ml) will work best for this recipe as solved the binding issue..
      I have also shared authentic recipe - link is available above.. but this is easier method to follow and give best result..
