Aloo Gobi Capsicum Masala..

How to prepare Aloo Gobi capsicum masala | Aloo Gopi masala Recipe | Spiced cauliflower and potatoes fry | Punjabi Aloo Gobi masala recipe | Dry aloo Gobi ki sabzi


Aloo Gobi Capsicum Masala is Indian vegetarian dish made with cauliflower, potatoes, capsicum and tomatoes and flavored with Indian spices.





Aloo Gobi Capsicum Masala is one of the most preferred vegetable in our home.




 You can try this recipe with chapatti, or rice and dal. It’s very delicious!







Required:








◾Cauliflower

300-350 gms wash, cut into medium florets



◾Potatoes

3-4 medium, cut lengthwise into 1 inch thick slices



◾Tomatoes

2-3 medium size, finely chopped 



◾Capsicum

2-3 medium size, cut in medium cubes



◾Curry leaves

5-6 number

◾Ginger
2 inch of pod- peeled and finely chopped 

◾Green Chillies
3-4 number 

◾Coriander leaves 
A handful

Dry Ingredients


  • Coriander Powder - 3tsp
  • Turmeric Powder - 1tsp
  • Red chilly Powder - 2tsp
  • Salt to taste




Refined oil for frying 200-250 ml








Action



Step I: Cutting and chopping of following vegetables






✔Wash, peel and cut the potatoes in lengthwise in 1 inch thick slices. Keep them in water to avoid discoloration.



✔Wash, cut cauliflower into medium florets



✔Finely chop tomatoes



✔Clean, peel and chop garlic in small cubes or julienne



✔ Chop capsicum in medium cubes.



Step II: Spread potatoes and cauliflower on napkin 

This step is really very important to follow, the purpose of doing this is napkin absorbs moisture from both which results in comfortable and safe frying.


Step III: Cooking Time 

Heat the sufficient oil in a pan, when it is hot, add the potatoes and fry them until they are golden and almost tender. Lift the potatoes out with a slotted spoon, Keep aside (This process takes 7-8 minutes on medium to high flame) 


Now follow the same process with cauliflower florets. Fry until crispy and browned in color. When done, remove in plate, keep aside, at the same time remove oil from pan and leave 1tsp oil. This process takes approximately 5-7 minutes (on medium to high flame) 

Now take the same fry pan, where you left one tsp oil, in that add chopped tomatoes, curry leaves, ginger and green chillies. First cook tomatoes on high flame for one-two minutes, then cover the lid and cook on slow flame for 3-4 minutes, till tomato is tender(cooked properly)



Now remove the lid, add the dry ingredients, that is coriander, turmeric, red chilly powder and salt to taste, Mix well, add 5-10 ml of water if required, after adding dry ingredients as helps to mix well and avoid getting burnt.


Now in this add fried potatoes, cauliflower and capsicum, mix well, put very little water if required.
After adding water, you need to cover the lid, and cook on slow flame for 4-5 minutes, till potatoes gets properly cooked, when done, garnish with fresh coriander leaves.
