Thecha - Sautéed Garlic Green Chilly Chutney




Thecha is authentic maharashtrian recipe. Thecha is a popular accompaniment which is prepared mostly in the rural parts of Maharashtra. 



This mainly goes very well with Jawar Bhakari or Roti.




In marathi, Thecha means to crush or pound. In hindi it means Thechna or kuchalna.



You have to crush or pound together lots of garlic and green chillies in a mortar and pestle to make this much loved irresistible Chutney.


Required

8-10 Garlic cloves

2-3 Green chillies

A handful Coriander leaves

Salt to taste

Few drops of lemon

1tsp cooking oil






◾Heat 1 tsp of oil in a pan and sauté garlic cloves on slow flame, stir continuously till it gets cooked and turns golden brown. Remove in bowl and keep aside. Let it gets cool down.

This process will take 3-5 minutes




◾In the very same cooking pan saute chillies and coriander on slow flame for 2-3 minutes, remove and cool down.



◾Now pound this mixture coarsely in a mortar and pestle adding salt and few drops of lemon juice. (Lemon drops are my adding to recipe as purpose its taste awesome and reduce chillies affect).




Serve with phulkas or chappathis.
