Kathal Ki Sabji ( Raw Jackfruit Spicy Indian Curry)



How to prepare Raw Jack Fruit Vegetable| Kathal Ki Sabzi | Fansa Chi Curry | Fanas Ki Subzi |फनस (फणस) की सब्ज़ी

Jack fruit is a huge tree that grows to as high as 30 meters, higher than the mango tree.




The jack fruit is a very large fruit, and part of the Mulberry family. It’s native to Asia, and can be either green or yellow. Jack fruit in Hindi is called as Kathal (कटहल) and in Marathi - Phanas.(फणस).



Making recipe from jack fruit is very easy, but tough part is peel and cut jack fruit, as its very sticky and hard, so before cutting and removing skin of raw jack fruit, please make sure that your hands are well greased with coconut or cooking oil. Otherwise it can lead to itchiness. Everything except the skin of the jack fruit and the skin of its seed, is edible and should be used in the curry. Chop it up nice and good once the skins have been removed. As we get the peeled and chopped jack fruit in our area, so process of cooking become very fast.



I still remember in my school days, subziwali use to come at our doorstep, they use to do the work of chopping and cutting nicely and mom use to make  it  regularly.


Jack fruit is a vegetable but in appearance and taste it looks like chicken, so that's the reason vegetarian people enjoy this a lot as they find it good alternative for non veg food. 😊😁😆






Ingredients needed


  • 250 gm Raw jack fruit peeled and chopped
  • 4 medium onions roughly chopped
  • 3 medium tomatoes roughly chopped
  • 6 garlic cloves peeled
  • Small piece ginger peeled and chopped
  • 6 no. Curry leaves
  • 2 no. Green chillies


Dry Ingredients

  • 3 tsp coriander powder
  • 2 tsp red chilly powder
  • 1 tsp turmeric powder
  • Salt to taste
  • 1 tsp Garam Masala Powder
  • Coriander leaves for garnish
  • 1 Lemon
  • 2 tbsp Cooking oil 


Method

✏ Step 1 : Cutting and chopping of vegetables

◾Peel and cut jack fruit in small pieces.

◾Peel and chop onions

◾Chop Tomatoes

◾ Peel and chop ginger and garlic.


✏ Step 2: Make Coarse paste

◾ Take blender or mix grinder jar and make coarse paste of ginger, garlic, green chillies and curry leaves. If you like you can also add 1tsp whole coriander seeds along with above, as freshly grounded coriander taste good.




✏ Step 3: Saute Jack fruit
◾ You can follow step 3 and 4 together, simultaneously, as i did the same, used two gas stoves for fast cooking.


◾ Take 1tbsp refined oil, and saute jack fruit till slight golden in color. Keep aside, (This process will take 10- 15 minutes on slow to medium heat).



Purpose of sauteing is that it will remove stickiness and jack fruit gets cooked nicely.


Cooking will be done in pressure Cooker.


✏ Step 4: Cooking Time

◾Heat oil in a pressure cooker and cook onions on high flame till light brownish in color.


◾Add ginger, garlic and green chillies paste, saute for 1-2 minutes,



◾ then add chopped tomatoes, 





◾ first 1-2 minutes cook on high flame, then slow the flame, cook till tomato gets cooked properly..


◾ Now add turmeric, coriander powder, red chili powder and salt to taste and mix well.



◾Add jack fruit in this gravy, mix well, saute for 2-3 minutes, 




◾add 2 glasses of water, mix and cover the pressure cooker and allow to pressure cook up to 3-4 whistles, then slow the flame and cook for 4-5 minutes on low heat.







◾ Lastly, add the garam masala and turn off the heat. Serve hot with chappati, rice or Jowar Roti..
