How to make sukhe aloo ki sabzi in marwari style... | Sukhe Aloo Ki Sabzi (Marwari Style)
This sukhe aloo ki sabzi reminds me of very sweet and loving marwari aunty (our neighour), who taught me this recipe, when I was first year college student. What fascinated me that time in this sukhe aloo ki sabzi is the way she finely chopped aloo in attractive cubes. This is first time, I got to know that aloo can be cooked this way.
In our house, mom always use to deep fry and spice up with all Indian masala, so this recipe excited me a lot, as we can enjoy potatoes this way too and without deep frying..
For sukhe aloo ki sabzi we require:
✒4 Aloo (Potatoes)
✒1-2 green chilly
✒2tsp mustard seeds
✒1tsp cumin seeds
✒ ½ tsp methi seeds
✒5-6 Curry leaves
✒1 tsp hing
✒1 tsp hing
✒1 tsp Turmeric Powder
✒1tsp coriander powder
✒1tsp coriander powder
✒2tsp Red Chilly Powder
✒½ tsp garam masala powder
✒½ tsp dry mango powder
✒½ tsp garam masala powder
✒½ tsp dry mango powder
✒Salt to taste
✒1 tbsp cooking oil
Method
Step 1: Chop potatoes in cubes
◾Wash, peel and chop potatoes in very small cubes, keep in water to avoid discoloration.
Step 2: Cooking Time
(In today's recipe i am using new potatoes, it gets cooked very fast without pressure cooking, if using old potatoes then one whistle in pressure cooker is needed in this recipe.)
◾Heat oil in pressure cooker or kadai.
◾First add mustard seeds....
◾when they splutter, then add cumin and curry leaves.
◾ lower the flame add potatoes, sauté for 3-5 minutes on medium flame.
◾Add all dry ingredients mentioned above..
◾Stir once again and allow to cook on low flame, covering with lid, add half cup or very little water to avoid dry ingredients getting burnt, check and stir in between.
◾Cover and cook till the aloo are cooked nicely. (will take approx. 4-5 minutes.)
◾Garnish with coriander leaves, Serve hot with chapatti, or dal rice. Enjoy the most easy and tasty recipe of Sukhe Aloo ki Sabzi.
