How to prepare Aloo Gobi | Aloo Gobi Dry Masala | Punjabi Aloo Gobi Capsicum Recipe | Spiced Cauliflower and Potatoes |Fried Aloo Gobi Masala Recipe
Aloo Gobi Masala is an Indian vegetarian dish cooked with cauliflower, potatoes, capsicum and tomatoes and flavored with Indian spices. Aloo Gobi is also spelled as Alu Gobi, Aloo Gobhi or alu gawbi. Aloo Gobi Capsicum Masala is one of the most preferred vegetable in our house. You can try this recipe with chappaties, or rice and dal. It’s very delicious!

Ingredients required for Aloo Gobi Fry Masala
- 300-350 gms Cauliflower
- 3-4 medium size Potatoes
- 2-3 medium size tomatoes
- 1-2 medium size Capsicum
- 5-6 no. Curry leaves
- 1 small piece Ginger
- 3-4 number Green Chilies
Dry Ingredients
- 3 tsp Coriander Powder
- 1 tsp Turmeric Powder
- 2 tsp Red chilly Powder
- Salt to taste
- Refined oil for frying 200-250 ml
✏Step I: Miss en place
◾Wash, peel and cut the potatoes in lengthwise in 1 inch thick slices. Keep them in water to avoid discoloration.
◾Wash, cut cauliflower into medium florets
◾Finely chop tomatoes
◾Clean, peel and chop ginger in little cubes or julienne
◾Chop capsicum into small square blocks
✏Step 2: Spread potatoes on a napkin
◾This step is actually very important to follow, the purpose of doing this is napkin absorbs moisture which results in comfortable and safe frying.
✏Step 3: Cooking Time
◾Heat oil in a pan, when it is hot, add the cauliflower florets, fry them until they are light golden in color. Lift the cauliflower florets out with a slotted spoon, Keep aside (This process takes 7-8 minutes on medium to high flame)
◾Now follow the same process with potatoes. Fry until crispy and light golden in color. This process requires approximately 5-7 minutes (on medium to high flame) When done, remove in plate, keep aside, and also remove oil from pan and leave 1 tsp oil.
◾Now take the same fry pan, where you left one tsp oil, in that add chopped tomatoes, curry leaves, ginger and green chilies. Mix well. Simmer covering lid for 2-3 minutes.
◾First cook tomatoes on high fire for one-two minutes, then cover the lid and cook on slow flame for 3-4 minutes, till tomato is tender (cooked properly)
◾Now remove the lid, add the dry ingredients, that is coriander, turmeric, red chilly powder and salt to taste, Mix well, add 5-10 ml of water if needed, after adding dry ingredients as helps to mix well and avoid getting burnt.
◾Now in this add fried potatoes, cauliflower and capsicum, mix well.
◾cover the lid, and cook on slow flame for 4-5 minutes, till potatoes get properly cooked, when done, garnish with fresh cilantro leaves.
