Today I'm sharing yet another all time favorite and one of the most preferred sandwiches in our home. I love exploring and adding new ingredients to make a sandwich healthy, colorful, nutritious and tasty.
For me cooking is all about creating something new, satisfying, exciting, yummy and healthy too. In today's recipe I have used carrots, pepper, sweet corn kernels, potatoes , onions, green chilies.
Let's start with step by step recipe of Grilled Cheese Vegetables Sandwich

- 12 bread slices
- 6 cheese slices
- 4-5 medium size boiled potatoes
- 1 handful of sweet corn kernels
- 1 medium size capsicum (finely chopped)
- ½ carrot (finely chopped in cubes)
- 1 onion (finely chopped)
- 3 handful cabbage, chopped
- 50 grams butter/ghee
- 2tsp red chilly powder
- 2-3 green chilies, chopped
- 2tsp red chili flakes (optional)
- 1 tsp lemon juice
- Salt to taste
Here's the step by step process
Step 1. Mise en place
✒Pressure cook potatoes allow 3-4 whistles or until soft, Remove in colander, peel and mash, keep aside.
✒Blanch carrots and sweet corns for 5-7 minutes, remove in colander, keep aside.
✒ Finely chop carrots, capsicum, onions and cabbage
✒ Take a bowl add mashed potatoes, in that add onions, capsicum, blanched carrots and sweet corns, salt, 1tsp lemon juice, green chillies, red chilly powder, mix well, our stuffing is ready for grilled sandwiches.
Step 2: cooking Time
✒ Apply butter on the bread slices, top with cheese slice, sprinkle red chilly flakes and then add 1tbsp masala stuffing prepared above.
✒ Place another slice of bread on the top and toast on grilled pan.
✒ Apply very little butter on top of a slice and roast both sides until crispy.
