Carrot Pickle {Gajar Ka Achaar}

How to prepare Carrot Pickle | Easy Recipe of Gajar ka Achaar | Pickled Crunchy Carrots Recipe | 

Today I am sharing very easy and quick recipe of carrot pickle. This carrot pickle is generally prepared during winter season because in India the best carrots are available in this season. 

The USP of this carrot pickle is that it gets ready for use within three to four days and loved by all. This carrot pickle is one of the most relished pickle, not only in my house, but in my friend's house too.

Let's start with an easy recipe of Gajar ka Achaar:

Recipe Details:

  • Preparation Time 15-20 min
  • Cooking Time: 2- 3 min

Ingredients Required for Instant Carrot Pickle

  • 400g Carrots
  • 120ml Mustard oil
  • 50g Jaggery 
  • 2tsp Cumin Seeds 
  • 1tsp Asafoetida
  • 1tbsp Split Mustard Seeds (Cracked Mustard Seeds)
  • 1tbsp Split Fenugreek Seeds
  • 1tbsp Onion Seeds (Kalonji /Black Seeds / Nigella)
  • 1tbsp Fennel (Sanuf)
  • 1tsp Black Pepper corns
  • 3tbsp Red Chilly Powder
  • 1tsp Turmeric Powder
  • 1tsp Vinegar
  • Salt to taste

Ingredients Required for Instant Carrot Pickle

✏ Method: 

✒ Wash carrots under running water tap, peel and pat dry with a clean cloth and cut into 2 inch strips.

✒ Wrap the carrot strips in a dry towel, to get rid of excess water.

✒ Combine carrots and all ingredients mentioned above except mustard oil, cumin seeds and asafoetida.

Split Fenugreek Seeds


✒ Heat mustard oil on high flame till it reaches smoking point, switch off the gas stove. Wait for 30 seconds, then add cumin seeds and asafoetida in it.

✒ Pour the hot cumin, asafoetida and mustard oil over the carrots and dry spices. Add 1tsp vinegar. Toss it well.

✒ Cool, transfer in a pickle jar, it is ready to consume within 4-6 days. It will remain upright for 3-4 weeks 


  • You can use normal cooking oil instead of mustard oil.
  • Prepare this in small quantity as this pickle don't have good shelf life..
