Gawar Aloo Ki Sabzi - Cluster Beans Vegetable with Potatoes

Gavar/Guar/Guwar/Guvar bean or cluster bean is an annual legume and the source of guar gum.



 It is known as गवार् gawaar in Punjabi, Urdu, Hindi and Marathi.

Ingredients required


  • 250 g Cluster beans roughly chopped in cubes
  • 15-20 Garlic cloves  finely chopped
  • 3 no. Tomatoes medium size
  • 3 no. Potatoes 2 medium size (boiled and then peeled and cut into cubes) 
  • 2 Green chillies
  • Handful of coriander leaves
  • 1tbsp Cooking oil 
  • 2tsp coriander powder
  • 2tsp red chilly powder
  • 1tsp turmeric powder
  • Salt to taste



Method


✏ Step 1 : Mise en place


◾ In this recipe, first wash cluster beans (250 gms), remove tips and tails and then roughly chop them in cubes..


◾Pressure cook gavar with aloo (3 medium size) for 5-7 minutes. Apply two whistles and switch off the gas stove. Have a look at water added at the time of boiling.


◾  After  pressure cooking it look like this.



◾ Strain water with help of Colander and keep aside.



◾ Peel and finely chop garlic.


◾ Wash coriander leaves under running water tap, wash and finely chop tomatoes, coriander leaves and green chillies and make a coarse paste by adding ⅛ cup water.






    


Step 2 : Cooking Time

◾Take one tbsp refined oil in cooking pan.Add Finely chopped garlic and cook for 30 seconds on high flame. Cook till slight change in color.




 ◾Add coarsely ground paste of coriander leaves, tomatoes and green chillies. Cook on high flame for three to five minutes.



◾  Add dry ingredients and cook till fat separates. 





◾ Add Cluster beans and potatoes and mix well.





 ◾ Cover the lid and cook for 4-5 minutes on slow flame till cooked properly. Serve hot with Indian Roti .

Notes: 
1. Don't add garlic paste in this recipe. Always add coarsely grinder or chopped garlic. 

2. Don't pressure cooker cluster beans for longer time. Blanching is also good alternative for boiling.

3. Don't cook cluster beans in masala for longer as that result in sour taste.

4. Dry anar Dana seeds (dry pomegranate seeds) can also added in this gravy for a tangy flavour.
