My today's recipe is interesting amalgamation of two protein rich foods. This combination works best as soya granules not only give thickness to gravy but enhances taste and food appeal.
Soya granules and soya chunks are made from soybean. Soy beans is not only rich is protein, but also good for bone and heart health as it contain special nutrient isoflavones and saponins, which helps to lower the cholesterol and prevent building of plaque in arteries.
In my today's recipe the wadi which I am using are ready made urad dal wadi which are easily picked from grocery shops in India.
This is my second posting on Punjabi wadi, the first post was Gathiya and Punjabi Dal Wadi Ki Sabzi..
For making Punjabi wadi and soya bean granules we require:
✒100 gms Soya bean granules
✒4 Punjabi wadi
✒3-4 medium size Onions - (Purée)
✒3 medium size Tomatoes - (Purée)
✒7-8 garlic cloves (will make coarse paste)
✒5-6 Curry leaves
✒Small piece of ginger (will make coarse paste)
✒1 green chilly
✒2 Lemons (required lastly at the time of serving)
◾Dry ingredients
✒Coriander Powder 2tsp
✒Turmeric Powder 1tsp
✒Red chilly Powder 2tsp
✒Garam Masala Powder 1tsp (will go last before serving, if required)
✒Salt to taste
cooking oil 1tbsp.
(Important point: When this recipe gets cooked properly, oil floats on the surface, even added little for cooking, like in my today's recipe, so add oil accordingly, but if added very less, then onion cooking become difficult task as onion puree gets burnt and stick on the bottom of cooking pan.)
Method
Step 1: Mise en Place
◾Puree Tomatoes in blender or mixer grinder by adding half cup water.
◾Puree Onions in blender or mixer grinder by adding little water if required.
◾Make coarse paste of ginger, garlic, green chillies and curry leaves and keep aside.
Step 2: Boil soya granules
Bring water to boil, add half cup milk, add soya bean granules, after one boil, switch off the gas stove,drain the milk water with help of colander and keep colander under running water tap for few seconds, then remove excess water from soya bean granules and keep aside.
Cooking will be done in pressure cooker.
Step 3: Cooking Time
◾Take pressure cooker add 1tbsp cooking oil, add onion paste, cook on high flame, stirring constantly, as chances of getting burnt, so be attentive in this step. We have to cook till onion turns golden in color (will take approximately 3-4 minutes)
◾Now add coarsely grinder paste of ginger, garlic and green chilies, sauté for 15 seconds and then add tomato puree and Punjabi wadi.
◾Mix well, cook till tomato is properly cooked. Cook for 3-5 minutes. (first 2 minutes cook on high flame and then on slow flame). Now add soya granules and all dry ingredients mentioned above except garam masla powder, mix well add glass of water (350 ml) mix all well and then cover the pressure cooker and allow to whistle 5-6 times and then slow the flame and cook for one - two minute.
◾Remove from gas stove, Wait for cooker to open, check the Punjabi wadi by insetting knife whether cooked or not, if not cooked, then add water if required and allow to whistles for 2 times.
