Drumstick is scientifically called as Moringa oleifera.
The pods of the drumstick are important vegetable in curries, sauces, and are very popular in India food.
Drumsticks are very good for healthy bones and very rich source of proteins, calcium, iron and Vitamin C.
My recipe of drumsticks is very different and unique and have awesome taste, it goes well with roti or with split green dal rice.
Required
✔ 4-5 Onions roughly chopped
✔2-3 Drumstick s peeled and cut in 3 inch piece
✔2 Potatoes peeled and sliced
✔ 3-4 Tomatoes finely chopped
✔Ginger small piece peeled and chopped
✔5-6 Cloves of Garlic - chopped
✔2-3 Green chilies
✔1tsp Turmeric
✔3tsp Coriander powder
✔2tsp Red Chili powder
✔1tsp Garam Masala Powder
✔1tbsp Oil
✔Salt to taste
Method
Step 1 : Cutting and chopping of vegetables
◾Wash, peel and cut drumsticks in 3 inch piece.
◾Peel and slice potatoes
◾Chop Onion's
◾Chop Tomatoes
◾ Peel and chop ginger and garlic.
Step 2: Boil Drumsticks
Boil drumsticks with pinch of salt and minimum water for 10-12 minutes, cook till ¾ done, don't throw the water in which you had boiled drumsticks, if needed we will use that in our gravy.
Step 3: Shallow Fry potatoes
Spread potatoes on the napkin
This is very important to follow, the purpose of doing this is napkin absorbs moisture which results in comfortable and safe frying.
Take 3-4 tbsp refined oil, and fry potatoes till slight golden in color. Keep aside.
Step 4: Make gravy- Cooking Time
Heat oil in a cooking pan and cook onions on high flame till light brownish in color.
Add ginger, garlic and green chillies, saute for 1-2 minutes, then add chopped tomatoes, first 1-2 minutes cook on high flame, then slow the flame, cover the lid, cook till tomato gets cooked properly.
Now open the lid, mix well and then add turmeric, coriander powder, red chilly powder, mix well, add ½cup of water in it, as that helps the dry ingredients to mix and don't get burnt.
Use drumsticks water - water in which we boiled drumsticks.
Add the potatoes and drumsticks in this gravy, add ½cup water, mix gently and cover the pan. Let it gets cooked on low heat for 4-5 min. Check the potatoes by inserting knife or cooking spoon whether cooked or not, if looks soft, and easy to break, means its done.
Lastly, add the garam masala powder.
Serve hot with chappati.
