Matar Paneer aka Mattar Paneer Bhurji is a popular Indian recipe made from crumbled cottage cheese, peas, capsicum, onions, tomatoes, green chilies and spices.

Ingredients
✒250 gms Paneer - (crumbled)
✒4-5 medium Onions - (chopped finely)
✒2 Green Chillies - (chopped)
✒6-7 garlic cloves (chopped)
✒1 small piece Ginger (chopped)
✒2-3 medium Tomatoes (chopped finely)
✒1 cup peas
✒1 capsicum
◾Dry ingredients
✔1tsp Garam Masala powder
✔1tsp Turmeric powder
✔2tsp Red Chilly Powder
✔1tsp Coriander powder
✔Salt - to taste
◾Ghee or oil - 1 tbsp
Method
✏Step 1: Make Paneer
✏Step 2: Mise en Place
◾ Peel the onions and chop them finely.
◾ Wash the tomatoes and finely chop or puree it.
◾Make coarse paste of ginger, garlic and green chillies.
✏Step 3: Boil peas
◾Add enough water to cover the peas. Cook at a slow fire until peas are tender and most of liquid is absorbed. (Left over stock, we will add in this gravy)
Step 3 and 4 can be processed simultaneously.
✏Step 4: Cooking Time
◾Heat oil in pan and add onions. Cook on high flame till turn golden brown. (This step will take 3- 5 minutes).
◾Add ginger garlic finely chopped. Cook for one minute on high flame and then add tomato puree. Cook tomatoes on high flame for 2 minutes.
◾Add peas and paneer. Mix and add one cup water. Don't throw water in which peas are boiled, use that stock (water). Cook on slow flame for 2-3 minutes, covering lid, till oil separates.
◾Add capsicum, mix and cook for 3-5 min.
