This is my second blog posting on bhindi. My earlier posting on bhindi was bhindi green garlic masala and Bhindi do pyaza recipe
Course: main course (side dish)
Preparation Time: 10-15 minutes
Cook Time: 10-12 minutes
For making Tava Bhindi Masala Fry, we require
✒ 300 gms Bhindi
✒ 1 tbsp ghee
✒ 4-5 tsp coriander powder
✒1tbsp besan (gram flour)
✒ 3 tsp Red chilly powder
✒ 2tsp Turmeric
✒⅓tsp hing powder (asafoetida)
✒2tsp dry mango powder
✒ salt to taste
Step by step process of tava bhindi masala fry
✏Step 1: Wash and slit Okra (Bhindi)
◾Wash under running water tap, clean and pat dry the okra with a clean cloth, trim the ends and slit the okra, don't cut them in two pieces, just slit as we can able to stuff masala inside..
✏Step 2 : Make dry stuffing for bhindi
◾Mix all the ingredients in a plate Keep aside.
(Ingredients used for stuffing: coriander powder, red chilly powder, turmeric, dry mango powder, besan, asafoetida and salt to taste)
✏Step 3: Stuff bhindi
◾Stuff the prepared stuffing into each bhindi. We have to stuff each and every bhindi with this above stuffing,
✏Step 4: Cooking time (will take 7-10 minutes)
◾Heat ghee on flat griddle, add these stuffed bhindis and spread them around the griddle pan in a single layer, first 1-2 minutes to cook them on high flame, gently stir in between..
◾ then simmer and cook with covered lid. When we cover with lid, it leads to fast cooking and moisture is retained. Every few minutes, turn the bhindi to allow even cooking on all sides. Turn off heat. Serve with rice or roti.
