Punjabi Wadi Ki Subzi

Punjabi Wadi Ki Subzi is one of the most favored food in our house. This is my third posting on Punjabi wadi. The earlier posting on wadis are as follows

The wadi is made from lentils are very tasty and nutritious. Wadis are of different types that is Moong Dal Wadis, Spicy Dal Wadis, Urad Dal Wadis etc. The Wadis are basically sun dried and made of dal cooked with loads of black pepper and red chilies. 





We always pick wadi from the grocery store. The one I am using in this recipe is made from urad dal.

✏Ingredients


✒ 5 Urad dal wadi 
✒ 5-6 Onions
✒2 Potatoes
✒3-4 Tomatoes
✒Ginger small piece
✒5-6 Cloves of Garlic
✒2-3 Green chilies






✏Cooking oil needed

For shallow frying 70-100 ml
For cooking 1 tbsp Oil



✏Dry ingredients

✒1tsp Turmeric powder
✒3tsp Coriander powder
✒2tsp Red Chili powder
✒2tsp Garam Masala Powder
✒Salt to taste




✏Step 1: Mise en Place

◾ Peel the onions and chop them roughly.

◾ Wash the tomatoes and finely chop or puree it.

◾Make coarse paste of ginger, garlic and green chilies. 

◾ Peel the potatoes and cut them into small blocks. Place them in water to avoid discoloration.







✏Step 2: Pressure Cook urad dal wadis.

◾Add two glasses of water in pressure cooker approximately (600-700 ml). Pressure cook, allow 6-7 whistles. (Depend on the quality of wadi, do check and allow more if not cooked in 6-7 whistles.)







✏Step 3: Shallow Fry potatoes

◾Spread potatoes on the napkin as this helps to absorb moisture from potatoes, which results in comfortable and safe frying.




◾Take 5-6 tbsp refined oil, and fry potatoes till slightly golden in color. Keep aside,







✏ Step 4: Cooking Time


◾Heat oil in a pan. Add the onions, sauté them on high flame until translucent.







◾Add the ginger, garlic, green chilies coarse paste, saute for 10-15 seconds.



◾Add tomato puree, cook on high fire for 2-3 minutes, until water evaporates.






◾Add dry ingredients that are turmeric powder, coriander powder, red chilly powder and salt to taste, mix and saute for a min. 







◾Add the potatoes, boiled and broken in pieces urad dal wari and ½ cup water, mix well. Let it gets cooked on low heat for 4-5 minutes. 










◾Check the potatoes by inserting knife or cooking spoon whether cooked or not, if looks soft, and easy to break, means it's done. Lastly, add the garam masala and turn off the heat. Serve hot with chappati.
