How to make Potato Masala for Masala dosa | Potato Filling for Masala dosa.
Ingredients needed for Potato Filling
⚫500 gms boiled potatoes
⚫3-4 medium sz Onions (thinly sliced)
⚫1-2 green chilies or as per taste
⚫1 dry red chilly
⚫5-6 curry leaves
⚫½tsp hing powder
⚫1 tsp mustard seeds
⚫1tsp cumin seeds
⚫1tsp fenugreek seeds
⚫1tsp urad dal
⚫1ts chana dal
⚫1tsp turmeric powder
⚫1tsp red chilly powder
⚫2tsp coriander leaves
⚫2tbsp cooking oil
⚫Salt to your taste
Process of making potato filling for Masala dosa
Step 1 : Mis en place
◾Boil potatoes, peel, cut into small cubes or mash them.
◾ Peel and slice onions.
Step 2 : Cooking Time
◾Heat oil in a pan and add the mustard seeds, when splutter, add cumin seeds, fenugreek seeds, curry leaves, Chana dal, urad dal, saute for 15-20 seconds. Add sliced onions, saute until onion turns translucent.
◾Add dry ingredients that is turmeric powder, red chilly powder and salt to taste, saute for 5-10 seconds.
◾Add 120 ml water, and cook for 2-3 minutes.
◾ when start boiling, add potatoes, cover the lid, cook on slow flame for 5-7 minutes, until potatoes are soft and tender. You can mash them with a spatula, once potatoes get cooked nicely.
◾Switch off the flame. Our filling for the masala dosa is ready. Garnish with coriander leaves.
