Macaroni Makhana Curry



Makhane (Phool Patasha) loaded with nutrients are a good source of protein, calcium, iron and fiber. 

Makhana is considered as very pious food and used in many rituals. They are also recommended for women in pregnancy and post natal weakness. Common names of makhane: Lotus seeds, Euryale ferox, foxnut, Makhana, qiàn shí




Mom use to cook this recipe regularly in school days. We also add peas in this recipe, but as peas is not available in my kitchen, so i had skipped . Pea's give nice color to this recipe, plus excellent source of protein and fiber.


In this recipe macaroni goes directly in cooking, and not boiled separately. If you prefer pasta to be cooked separately and starch should be removed, in such case, don't cook this recipe in pressure cooker, but make use of kadai or heavy bottom pan.


Macaroni is a one type of pasta, if you have any other variety of pasta, you can make use of that also in this recipe..


Required

✒1 small cup Macaroni
✒1 small cup Makhane
✒2 medium sz Potatoes
✒3 medium sz Tomato 
 (puree)

✒1bsp cooking oil


Dry ingredients

✒2 tsp red chilly powder

✒1tsp turmeric powder

✒1tsp coriander powder

✒Salt to taste

Process

Step 1: Mise en Place

◾Make tomato puree

◾Wash  potatoes, and then cut in four pieces without removing skin..



Step 2 : Cooking Time

Cooking will be done in pressure cooker


◾Heat oil in pressure cooker, first sauté makhane for 1-2 minutes, makhane has tendency to absorb oil, so add little oil for sauteing. Remove and keep aside. Makhane will be added lastly in cooking, as gets cooked very fast..




◾Now add tomato puree, saute for 3-4 minutes.

◾Add all dry ingredients, mix well....



◾Now add macaroni and potatoes, saute them for 1-2 minutes...


◾Add 500-700 ml water, pressure cook, allow 2-3 whistles, and then cook on slow flame for 2-3 minutes. 



◾Open cooker, add makhane, mix well, now after adding makhane, pressure cook again and allow only one whistle.




◾Serve hot with rice or chapati.
