Schezwan Dabeli...


Dabeli is street food originated in Kutch (Gujarat) and very famous food in Mumbai streets too..



Dabeli - is a Indian burger, a bread bun which is stuffed with potatoes, onions, pomegranates, peanuts and then spiced with garlic and sweet and sour tamarind, jaggery and dates chutney.


My  Schezwan Dabeli recipe is the most simplest verison of dabeli recipe and it will take less time of yours, without compromising on taste part. 




Normally two chutney are required in dabeli


2. Garlic chutney (made from garlic and red chillies)


Sweet chutney is omitted in my recipe, as dabeli masala which I had prepare serves both the purpose.


Garlic chutney is replaced with Schezwan sauce..


I am posting dabeli recipe in three blog posting separately for better understanding..

Action Plan

We require following for Schezwan Dabeli

1. Schezwan Sauce

Other ingredient required for Schezwan Dabeli

For dabeli stuffing

✒6-7 Potatoes (boiled, peeled and mashed)
✒2tsp red chilly powder
✒1tsp cumin seeds
✒2tsp cooking oil/butter
✒Salt to taste


✔For final presentation and serving




✒100-150 gms roasted peanuts
✒2 Pomegranates (seeds from 2 pomegranates)
✒2-3 onions very finely chopped
✒100 gms Nylon sev
✒100 gms butter (for roasting pav)
✒ Ladi Pav / burger buns




◾Process

Step 3: Stuffing Preparation



◾Boil, peel and mash potatoes, in that add salt and red chilly powder, mix well, keep aside.



◾Heat oil add cumin seeds, add dabeli masala paste, cook for 2-3 minutes, add ½ cup water (25-30ml). Cook for 1-2 minutes and then
switch off the gas stove.







◾Mix mashed potatoes in this, back to gas stove, cook for 30-40 seconds and keep aside.






◾Take plate, spread dabeli stuffing, top with coriander leaves, onions, roasted peanuts, pomegranate seeds, nylon sev.








How to serve 




◾Heat a griddle or tava, place pav, apply butter, roast both the sides for 1-2 minutes..




◾Arrange pav in serving plate, Spread Schezwan sauce on both the sides or as required. 



◾Top with dabeli stuffing prepared on plate, again touch up with pomegranate seeds, onion, sev, peanuts and fresh coriander leaves. 



◾Our dabeli is ready to serve, enjoy these delicious Dabeli...
