Left over Rice (Rice Plate)

The way inflation is rising, one need to spend wisely and don't waste food, and cook food with good care and caution to avoid food waste and left, but still we face problem of left over food, especially rice. If food is left over, we don't understand what to do with this, and even not interested to re-do or try something interesting, as we want things which gets cooked fast with minimum ingredients and also enhance the taste of left over food.


My recipe of rice plate is the very simple and easy to make by adding few ingredients. I very much love the taste of mustard seeds, green chilies and curry leaves in this left over rice.


Required

✔1 cup Left over rice 

✔2tsp mustard seeds

✔2-3 green chilies or as per taste

✔½ tsp turmeric

✔1tsp red chilly powder

✔1tsp cooking oil 

✔ Salt to taste

For garnish (Depend on availability)

✔½ lemon (juice)

✔2tbsp Aloo Bhujiya, Ratlami sev or Lehsuni (Garlic) sav or as per taste or availability.

✔2tbsp Pomegranate seeds


Method


◾Heat 1tsp cooking oil in fry pan, add mustard seeds. 

◾Let it splutter, then add curry leaves and green chillies, saute for 5-10 seconds...

◾Add cooked rice, turmeric and red chilly powder, mix well. 

◾Keep stirring for about 2-3 minutes to make sure the bottom does not stick. Turn off the gas stove.


◾Add lemon juice, sev of your choice and pomegranate seeds. Serve hot.
